Simply the best tasting chia pudding recipe you will make.
Ingredients
- 1/4 cup chia seeds
- 1 1/2 tablespoons maple syrup
- 1 tsp Suncore purple sweet potato super color powder (I purchase mine on Amazon)
- 1 cup unsweetened dairy-free milk (I like almond milk).
OPTIONAL TOPPINGS:
- Fresh blueberries
- Unsweetened shredded coconut
- Cacao nibs
- Toasted coconut chips
Instructions
1. In a medium-sized airtight container, combine milk, chia seeds, maple syrup, and sweet potato powder.
2. Refrigerate for at least 20 minutes, 4 hours is optimal, or even overnight.
3. To serve, divide into 2 serving dishes and top with some of the additional topping suggestions.

Tips: If you like a smoother texture, blend the mixture first in a blender, and then place it into an airtight container to refrigerate. This will give you a smoother pudding consistency, instead of the texture from the chia seeds.
