Gluten-Free Cinnamon Streusel Muffins

These muffins are the perfect meal to serve for Thanksgiving or Christmas morning. They are easy to make, delicious and the cinnamon is such a comforting flavor.

Ingredients
  

  • 1 cup gluten-free flour
  • 1 cup vanilla vegan protein powder
  • 1/3 cup coconut sugar
  • 2 teaspoons cinnamon
  • 1/2 cup water
  • 1/2 cup dairy-free milk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 teaspoons salt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce
  • 2 eggs *

CINNAMON STREUSEL TOPPING INGREDIENTS:

  • 1/4 cup gluten-free flour
  • 1/4 cup coconut sugar
  • 2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 2 tablespoons coconut oil

Instructions
 

  • STEP 1
  • Preheat oven to 425 degrees. Line muffin pan with paper baking cups or grease bottoms of muffin cups with nonstick cooking spray.
  • STEP 2
  • In a medium-sized mixing bowl, combine muffin ingredients until blended. The batter may be lumpy. Divide batter among muffin cups, about 1/4 cup for each muffin.
  • STEP 3
  • Stir together the streusel ingredients. Sprinkle streusel topping over each muffin, lightly pressing into the top of the batter. Bake in preheated oven for 15 to 20 minutes. The top should be golden brown and tops will spring back slightly when touched.
  • STEP 4
  • Remove from the oven, leaving in the pan to cool for five minutes. Remove the muffins from the pan and allow them to cool completely before storing. Enjoy.

Notes

Tips: *Vegan: Replace eggs with flax or chia eggs. To easily make a chia or flax egg, make a mixture of mixing 1 tablespoon of ground flaxseed or ground chia seed with 1 tablespoon of water.
