  • Prepare The Carrots
    Bring a pot of water to a boil and lightly steam or boil the carrots for about 5–7 minutes, until just tender (not mushy). Drain and set aside.
  • Make The Honey Glaze
    In a large skillet over medium heat, add the olive oil, honey, cinnamon, and thyme. Stir gently until warm and combined.
  • Glaze The Carrots
    Add the cooked carrots to the skillet and toss to coat evenly. Let them cook for 5–8 minutes, allowing the glaze to slightly caramelize.
  • Finish & Serve
    Season with salt and pepper, then finish with fresh parsley and an optional squeeze of lemon juice. Serve warm and enjoy!
