  • Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with a little olive oil.
  • Wash and peel the potatoes. Using a mandoline or a sharp knife, slice them into ⅛-inch-thick rounds for even cooking.
  • In a small bowl, combine the olive oil, minced garlic, parsley, sea salt, black pepper, and any optional seasonings you're using.
  • Arrange one-third of the potato slices in an even layer in the prepared baking dish. Brush or drizzle with one-third of the seasoned olive oil mixture.
  • Repeat with two more layers of potatoes, brushing each layer with the remaining oil mixture until all of the potatoes are evenly coated.
  • Cover the baking dish tightly with aluminum foil and bake for 50–60 minutes, or until the potatoes are fork tender.
  • Remove the foil and continue baking for 15–20 minutes, or until the tops are lightly golden and slightly crisp around the edges.
  • Remove from the oven and let the casserole rest for 5–10 minutes before serving. Garnish with additional fresh parsley and enjoy.

  • Yukon Gold potatoes can be substituted for a creamier texture.
  • Slice the potatoes evenly so they cook at the same rate.
  • For crispier edges, broil for 2–3 minutes after baking, watching carefully to prevent burning.
  • This recipe can be assembled up to one day in advance and refrigerated before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
