Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with a little olive oil.
- Wash and peel the potatoes. Using a mandoline or a sharp knife, slice them into ⅛-inch-thick rounds for even cooking.
- In a small bowl, combine the olive oil, minced garlic, parsley, sea salt, black pepper, and any optional seasonings you're using.
- Arrange one-third of the potato slices in an even layer in the prepared baking dish. Brush or drizzle with one-third of the seasoned olive oil mixture.
- Repeat with two more layers of potatoes, brushing each layer with the remaining oil mixture until all of the potatoes are evenly coated.
