Description

These jammy vegan blackberry oat crumble bars are gluten-free and vegan. They are naturally sweetened with bananas and dates, meaning no-refined sugar in this recipe. They are simple to make and taste delicious. Vegan, gluten-free, and refined sugar-free!


Ingredients

Scale
  • 1/3 cup almond flour
  • 2/3 cup oat flour
  • 3 Medjool dates, pitted
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons coconut oil
  • 1 tablespoon coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup blackberries
  • 1/2 medium ripe banana
  • 1 tablespoon honey

Instructions

  1. Put the flour, dates, coconut oil, vanilla, and coconut milk in the food processor to form a dough.
  2. Then spread half of the dough into a crust on the bottom of a parchment paper lined 4-inch square pie pan. 
  3. Put the remaining ingredients in the food processor, turn it into a blackberry sauce.
  4. Spread the sauce on the dough.
  5. Spread the remaining dough in a top crust. Next, bake in a preheated oven at 350 degrees Fahrenheit for 25 to 30 minutes.
  6. Slice into squares after cooled. Enjoy.

Can I use a blender if I don’t own a food processor?

Yes, however, you will have some difficulty removing the crust from the blender. I suggest you use a spatula to scrape the mixture from the blender.

Can I use almond meal instead of almond flour?

The topping of these pie bars is meant to be crumbly, so you can definitely use almond meal instead of the flour. Almond flour is made from blanched (peeled) almonds, so it is lighter in texture. The almond meal has a coarser consistency and adds more fiber. Other than that, the nutritional content is the same. There are more antioxidants in the almond meal due to the skin remaining. This will result in a slightly denser crust, but if you dislike the crumbly texture, simply add in more liquid. I suggest adding a tablespoon more coconut milk.

How to Store, Freeze, and Thaw Blackberry Squares:

Store any leftover vegan crumble bars in an airtight container in the fridge for 3-4 days. You can freeze your blackberry square bars layered between parchment paper in an airtight container for up to 2 months. Simply thaw, by removing from the freezer and allowing them to come to room temperature, takes 3-4 hours or even thaw overnight in the refrigerator. This recipe makes the perfect vegan breakfast bars to take on the go.
