1. Filtered Water -  Fresh, filtered water is best for gut friendly marshmallows.
2. Grass-Fed Gelatin - High-quality grass-fed gelatin is impressive for helping support and improving gut health and digestion
3. Honey - You can swap this out for your favorite sweetener of choice. Stevia also works well. I prefer the honey because it pairs well with the toasted coconut.
4. Vanilla Extract - It's always best to use high quality vanilla extract. The better the quality, the more flavor to the recipe.
5. Shredded Coconut - This recipe is sweet enough, so I advise using unsweetened shredded coconut.
6. Coconut Oil - The coconut oil adds another layer of flavor to give these marshmallows that delicious taste.

Step 2: Bloom the Gelatin

In a large mixing bowl, sprinkle gelatin over ½ cup of water. Let sit for 5 minutes to bloom.

Step 3: Make the Syrup

In a saucepan, combine the remaining ½ cup of water, honey, and salt. Heat over medium, stirring until it reaches a gentle boil. Simmer for 5-7 minutes until slightly thickened.

Step 4: Whip the Marshmallows

Slowly pour the hot syrup into the bloomed gelatin while mixing on low speed with a hand or stand mixer. Gradually increase the speed to high, beating for 10 minutes until the mixture is fluffy and forms stiff peaks.
