I love casseroles and potatoes. I don’t know what could be easier than this Paleo scalloped potato casserole recipe for any holiday meal. Potatoes are naturally gluten-free, therefore, they are one of my main sources of carbohydrates, especially sweet potatoes. But today I am talking about russet potatoes. This recipe for vegan baked scalloped potato casserole potatoes will become one of your favorite holiday potato recipes. The garlic, parsley, and olive oil combination are delicious together in this easy to make sliced potato casserole recipe.

Ingredients You Need for Paleo Scalloped Potato Casserole

Russet Potatoes: Russet potatoes hold up nicely in this dish. Yukon gold potatoes also work well in this paleo scalloped potato recipe.

Garlic: I decided to keep this recipe simple, with a fresh, minced garlic as the star flavor seasoning.

Parsley: I prefer fresh herbs, but if you only have dried parsley, this will work too.

Olive Oil: A very neutral cooking oil that is my personal favorite. It gives a light flavor to the dish.

Sea Salt: A must have ingredient for flavor and taste.

Black Pepper: Keep it simple with fresh, cracked black pepper.

Vegan, Baked Potato Casserole Makes a Great Holiday Side Dish Recipe for any Occasion

Potatoes are rich in potassium, copper, manganese, vitamin B6, and vitamin C. Copper is an essential trace mineral that doesn’t get enough attention, but is important to the body’s processes.

Copper and iron enable the body to form red blood cells, maintain immune function, and healthy bones. For example, one medium potato contains 26% of the daily requirement of copper. Copper is especially important for strong, beautiful hair.

Healthy, Vegan Potato Casserole Recipe

Author Laura Villanueva | Serves: 8 | Difficulty: Intermediate | Time: 75 minutes

INGREDIENTS

  • 8 Russet potatoes
  • 2 1/2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 5 cloves of garlic, minced
  • 1/4 teaspoon black pepper

DIRECTIONS

STEP 1

Preheat oven to 400 degrees. Scrub potatoes of any dirt and rinse. Coat the bottom of a 9 X 2-inch round baking dish. Peel all the potatoes.

STEP 2

Thinly slice the potatoes or use a mandolin slicer into potato chip-sized slices. Layer one layer on the bottom of the pan. Then lightly coat the top with olive oil. Sprinkle half of the garlic over the top of the baked potato casserole. Layer another layer over the top of the first layer of potatoes. and lightly coat with remaining olive oil. Sprinkle the remaining garlic over top of the Paleo scalloped potatoes. Finally, sprinkle salt and pepper over top.

STEP 3

Cover with aluminum foil and place into the oven for 45 minutes. Remove foil and cook for an additional 15 minutes or until the tops begin to brown.

STEP 4

Remove pan from oven and sprinkle the fresh parsley over the top. Serve this delicious sliced potato casserole dish for any celebration.

Recipe Tips For Paleo Scalloped Potatoes

WHAT KIND OF POTATOES SHOULD I USE FOR A HEALTHY POTATO CASSEROLE?

The starch content varies with each type of potato. However, I prefer the Russet potatoes in this baked potato casserole recipe. They are quite firm, so they don’t fall apart when sliced into scalloped potatoes.

HOW DO I STORE LEFTOVERS?

Leftover scalloped potatoes should be placed in the refrigerator in an airtight container to last for about 3 days.

TIPS TO REHEAT BAKED POTATO CASSEROLE LEFTOVERS

Simply place any leftover in an oven safe dish and cover with aluminum foil. Reheat for 25 to 30 minutes in a 350 degree oven.
