Fall is here and I am loving pumpkin recipes right now. This vegan pumpkin pasta recipe with crispy sage is the perfect cozy fall recipe. When I tell you this pasta recipe with pumpkin sauce tastes like an alfredo sauce with all the deliciousness of pumpkin fall vibes, I think you will agree. This is your go-to fall dinner recipe that is healthy, simple, and ready in under 30 minutes.

Ingredients You Need for the Best Pumpkin Pasta Recipe

Gluten-free Pasta: I like gluten-free chickpea penne pasta in this recipe, but you can also use fettuccine or any other gluten-free pasta of your choice.

Pumpkin Puree: Make sure you buy pumpkin puree and NOT pumpkin pie mix in a can. The two are not the same. Pumpkin puree is simply pumpkin puree without any sweeteners or spices added.

Coconut Milk: This is the base for the pumpkin pasta sauce recipe. It will add that element of creaminess and still remain a vegan-friendly dish.

Smoked Paprika: This seasoning adds a bold spicy flavor to the sauce. If you can’t find smoked paprika, simply use regular paprika.

Sage Leaves: I prefer fresh sage leaves but you can substitute dried sage spice too. If you use dried sage, you won’t get the crispy sage leaves that taste and look amazing.

Ground Turmeric: This spice is loaded with anti-inflammatory properties plus gives this pumpkin pasta sauce recipe a beautiful golden color. You can find more recipes with turmeric here.

Cayenne Pepper: I love cayenne pepper in recipes for that kick of spice without being too overwhelming. Cayenne pepper will still allow the other key ingredients to shine through in this recipe.

Ground Nutmeg: This delicious fall spice adds richness to the pumpkin pasta sauce recipe.

Vegan Parmesan Cheese: This ingredient will add that nutty cheesy flavor while keeping the recipe vegan friendly.

Pine nuts: Pine nuts add a crunchy, nutty taste to this recipe.

Let me be real with you about this recipe. The pumpkin pasta sauce is what makes the entire recipe. You can also use this sauce recipe in other recipes. I like to use it to top rice or quinoa. The variations in most recipes are endless. Get creative in the kitchen. But back to this creamy pumpkin pasta sauce.

The potassium in pumpkin also helps protect your heart health. Let’s not forget our digestive health too. Pumpkin is loaded with fiber, a mixture of both soluble and insoluble fiber. This helps to bulk up your stools and keep things moving properly so your digestive system is working optimally.

Vegan Pumpkin Pasta Recipe with Crispy Sage Leaves

Serves 4


  • 1 box of gluten-free pasta
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 cup pumpkin puree
  • 1 (13.5 ounces) can of coconut milk
  • 1/2 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • Splash of lemon juice
  • 1/8 teaspoon cayenne pepper
  • 4 leaves fresh sage leaves (or 1/2 teaspoon dried sage)
  • 1/2 cup vegan parmesan cheese


  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Over medium heat, heat the olive oil and garlic. Saute for 1 to 2 minutes.
  3. Add in the pumpkin puree, coconut milk,
  4. Top with extra vegan parmesan cheese and garnish with crispy sage leaves and pine nuts.

How to Store Leftovers and Reheat

I honestly don’t think you will have any leftovers of my fall pumpkin pasta recipe, but if you do, I have you covered. Store in an airtight container in the refrigerator for up to 5 to 7 days. Simply reheat on the stovetop or even in the microwave.
