- 16 ounces chicken, breast (Skinless & boneless)
- 8 cups cauliflower rice
- ½ cup onion, white
- 2 tablespoon coconut flour
- ½ cup coconut milk
- ½ cup tomato paste
- 2 tablespoon coconut oil
- 4 cloves garlic, fresh
- 2 tablespoon garam masala
- 1 pinch sea salt (To taste)
- 1 pinch black pepper, ground (To taste)
Instructions
- Firstly, place a frying pan on medium heat with coconut oil.
- Secondly, once the oil has melted, add the chopped onions, garlic, and spices. Next, cook until the onions are translucent.
- After that, combine the coconut milk, tomato paste, and coconut flour together in a bowl, mix and add to the pan.
- Next, slice the chicken into small cubes. After that, add the chicken back into the pan, cover and cook for 12-15 minutes.
- Meanwhile, while the butter chicken is finishing up, shred the cauliflower to create cauliflower rice.
- Placing a second pan on medium heat with olive oil, add the cauliflower rice, and a pinch of salt and pepper.
- Next, cook until the cauliflower resembles rice texture. Finally, once the butter chicken is done, combine both on a plate and enjoy.
