These gluten-free orange almond muffins are my new favorite breakfast option. My gluten-free muffins are one of the most popular recipes from this cookbook. I have been loving eating gluten-free muffins for fall. This is one of my favorite recipes from my cookbook, Beauty Nutrition Index Cookbook. 
My gluten-free muffins are always a hit in any household. The combination of the orange and almonds is simply delicious, bright, and refreshing. These are the perfect gluten-f.ee muffins for a quick and easy breakfast.
I wanted some delicious gluten-free muffins that were healthy, dairy-free, kid-friendly, and easy to make. Honestly, I thought this might be impossible given all I was asking. Well, I did it. I made the most delicious healthy muffins I have ever eaten. I really hope your family enjoys these as much as mine does.

RECIPE KEY NUTRIENTS

Iron, vitamin D, calcium, and potassium.

ORANGE ALMOND MUFFINS (Gluten-Free)

INGREDIENTS:

  • 2 1/2 cups almond flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup dairy-free milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup orange juice
  • 1 tablespoon orange juice
  • 1/2 cup coconut sugar
  • 2 eggs *
  • 2 tablespoons orange zest
  • 1 tsp almond extract
  • 1 tablespoon chia seeds

DIRECTIONS:

STEP 1

Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.

STEP 2

In a medium-sized bowl, combine the dry ingredients. In another bowl, combine the wet ingredients. Then combine the wet to the dry mixture until smooth.

STEP 3

Divide evenly into the muffin tin. Bake in the oven for 10-12 minutes. Remove from the oven and let cool.

Vegan Tip

Replace eggs with flax eggs.
