ORANGE ALMOND MUFFINS (Gluten-Free)
- 2 1/2 cups almond flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup dairy-free milk
- 1/2 cup unsweetened applesauce
- 1/4 cup orange juice
- 1 tablespoon orange juice
- 1/2 cup coconut sugar
- 2 eggs *
- 2 tablespoons orange zest
- 1 tsp almond extract
- 1 tablespoon chia seeds
Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.
In a medium-sized bowl, combine the dry ingredients. In another bowl, combine the wet ingredients. Then combine the wet to the dry mixture until smooth.
Divide evenly into the muffin tin. Bake in the oven for 10-12 minutes. Remove from the oven and let cool.
Replace eggs with flax eggs.
