8 potatoes, russet
2 tablespoons extra virgin olive oil
1 tablespoon parsley, fresh (Chopped)
¼ teaspoon sea salt
5 cloves garlic, fresh (Finely chopped)
¼ teaspoon black pepper, ground

Instructions

Preheat oven to 400 degrees. Scrub potatoes of any dirt and rinse. Coat the bottom of a 9 X 9 inch baking dish. Peel all the potatoes.
Thinly slice the potatoes or use a mandolin slicer into potato chip-sized slices. Layer one layer on the bottom of the pan. Then lightly coat the top with olive oil.
Sprinkle half of the garlic over the top. Layer another layer over the top of the first layer of potatoes. and lightly coat with remaining olive oil.
Sprinkle the remaining garlic over top. Finally, sprinkle salt and pepper over top.
Cover with aluminum foil and place into the oven for 45 minutes. Remove foil and cook for an additional 15 minutes or until the tops begin to brown.
Remove pan from oven and sprinkle the fresh parsley over the top. Serve this delicious and healthy sliced scalloped potato casserole dish for any celebration.
