My simple lemon kale salad dressing is full of whole, fresh ingredients without any additives you typically get from a store bought salad dressing. This vibrant and flavorful easy kale salad is my favorite debloat salad packed full of nutrition, but yet so full of flavor too.

The lemon garlic dressing is the key to making a great salad. A lemon garlic dressing is the perfect way to add flavor without being too heavy. The dressing is made up of lemon juice, garlic powder, and salt. The dressing is balanced and contains amazing flavors. The kale salad is budget friendly and easy to make. The kale salad is nutritious and contains various vitamins and minerals. Plus, I love the asparagus in this salad that helps me debloat.


Increase fiber content slowly, because too much fiber all at once can lead to bloating and gas. Oftentimes, clients tell me they can’t eat veggies or salads because they bloat like crazy. This usually is because they should slowly increase their fiber intake over time. Plus, drink plenty of water to help that fiber move along properly.

This makes the perfect side dish, or you can add a lean protein choice, such as chicken, fish, shrimp, or tempeh, to balance it out for a healthy lunch or dinner recipe. Plus, this lemon arugula salad recipe is really simple to prepare.

Ingredients You Need to Make This Simple Lemon Kale Salad

This delicious summer salad is actually really easy to make. All you need is a few simple ingredients.

Kale: You absolutely need kale to make a kale salad. I like the curly version of kale in this recipe, because it holds up nicely and is easy to massage the dressing into.

Lemon: You can make a lemon salad without lemons of course. This vibrant fruit will add a tangy, flavorful taste that works well in this salad recipe.

Olive Oil: I love to use extra-virgin oil oil in all my salads because of the light fresh flavor, but also the healthy fats it adds to the recipe. You can swap it for any avocado oil you have on hand. Learn more about avocado oils here.

Garlic: You can use fresh garlic, but I chose to use garlic powder to increase the depth of flavor in this recipe. I have used both fresh garlic with garlic powder, and it comes out fantastic too.

Asparagus: This hearty vegetable adds a nice crunch to the salad. In addition, the asparagus will add more vitamins and minerals to a summer salad recipe.

Pumpkin Seeds: I love pumpkin seeds in almost all my salad recipes, but you can swap it for any other nut or seed you have on hand.

Simple To Make Lemon Kale Salad Recipe


  • 4 to 6 handfuls of kale
  • 1/4 of red onion, finely sliced
  • 8 pieces of asparagus, cut into 1-inch pieces
  • 1/2 cup peas
  • 1/4 cup pumpkin seeds
  • 1/3 avocado, diced
  • 1/4 cup sundried tomato, roughly chopped
  • 1/4 teaspoon garlic powder
  • 1 lemon
  • 3 tablespoons extra virgin olive oil
  • salt & pepper to taste


  1. In a large serving bowl, toss in the kale with a drizzle of olive oil, about 1-2 tablespoons. Squeeze half of a lemon over the top. Massage the kale leaves with the olive oil and lemon juice. Set aside to break down.
  2. Next, begin a quick saute over medium-low heat of the asparagus, sundried tomatoes, and peas with olive oil. Saute quickly for 5 minutes. This is just enough time to break down the veggies while still maintaining their nutrients. We want the asparagus to have a bit of crisp to it, not become a mushy mess.
  3. Squeeze 1/2 lemon into the pan. Add in the garlic powder, salt, and pepper to taste. Cook for another 3-4 minutes to allow the flavors to melt together.
  4. Toss the sauteed veggie mixture over the kale. Toss together the red onion, pumpkin seeds, and avocado. Serve immediately or place in the fridge for later.
