For anyone who has a craving for strawberries on the keto diet, try making these strawberry energy balls to kick those cravings to the curb.

I created these vegan strawberry keto crave crushers to combat my sugar cravings during the afternoon slump. I was inspired by my strawberry shortcake recipe to make a quick and easy energy ball but with those delicious strawberry flavors that we all love.

Why You'll Love These Keto Strawberry Coconut Energy Balls?

Fiber Rich Snack - Packed with fiber rich chia seeds to get you closer to your daily fiber intake.
Great Source of Omega-3 Fatty Acids - Chia seeds contain high amounts of antioxidants and omega-3 fatty acids.
Functional Dessert - It's a functional dessert designed to nourish and satisfy.
Medium Chain Triglycerides - MCTs support metabolic function, as well as balance energy levels to avoid those energy slumps.

This beautiful and oh so tasty energy bite will become your new favorite keto friendly snack.

💞 Delicious Healthy Treats Perfect As A Valentine's Day Snack!

The chia seeds provide massive nutrients for a few calories. In addition, they are packed with fiber, as well as protein. They also contain high amounts of antioxidants and omega-3 fatty acids.

🤎 Almond Butter Health Benefits

Almond butter provides our body with additional fat for energy and crushes any cravings that we are having. I prefer sugar-free nut butter to keep this recipe low-sugar.

Raw Cacao Nibs Add Something Extra To This Craving Crusher Recipe

The cacao nibs give this a chocolate taste without adding sugary chocolate. If you don't mind additional sugar content, you can substitute it with regular chocolate chips and any nut butter you have on hand.

🩺 MCT Powder Health Benefits

Nutiva MCT powder is a medium-chain triglyceride powder. Medium-chain triglycerides support metabolic function, as well as level out energy levels to avoid crashes. Also, I know many of you are following a ketogenic lifestyle.

This recipe is perfect for the keto diet. I love the brand Nutiva for their MCT powder with the added prebiotic acacia fiber. This fiber helps feed the bacteria inside the gastrointestinal tract, which promotes a healthy gut.

💞 Pretty Pink Dust - My Secret Ingredient

Pretty pink dust is the secret ingredient that I add to many recipes. Goji berries are full of antioxidants. For this recipe, I added powdered strawberries, because they are yummy and it's pink for Valentine's Day.

I wanted to use goji berries in various other recipes. This is not only a great flavor boost, but also an antioxidant rich topping to add to many other recipes.

Instructions

First, start by setting up your toppings on a plate.
If you haven't already prepared "pretty pink dust", start by grinding up a handful of goji berries in a high-powered blender, like a Vitamix. I store my "pretty pink dust" in a Mason Jar to add to my oatmeal in the morning.
After that, grind up the dried strawberries. Combine the dried strawberries with the "pretty pink dust". Set out on a plate with the unsweetened coconut flakes.
Next, in a medium-sized bowl, combine the protein powder, almond butter, MCT powder, and chia seeds. Once combined, roll 8 balls into the desired toppings. Use a tablespoon of water to help add moisture to the balls. Makes it easier for rolling.
Place each ball in a baking cup. Place into the freezer or fridge to set up for 20 minutes. Enjoy.
