This healthy lemon coconut shake is actually pretty easy to make. The tropical summer flavor will transport, and bonus, this coconut shake is healthy too. All you need are a few simple ingredients and a blender.

You only need to blend up a few simple ingredients, and you will enjoy this drink in only a few minutes. The recipe below will make one shake, but you can double or triple the ingredients if you’re serving more people.

How to Remove the Rind from a Lemon?

So, what is the best way to remove the rind from a lemon when you want to use the flesh of the lemon too? Well, it is actually very easy to do. All you need to do is use a sharp knife and cut off the ends of the lemon, then cut it in half lengthwise.

When you have done that, you need to cut out the white pith from the inside of the lemon. The easiest way to do that is by cutting a V shape in it, and then pulling it out with your fingers. Be sure to remove the seeds, and you can now use the entire lemon in this delicious lemon coconut creme smoothie recipe.

LEMON SMOOTHIE INGREDIENTS

  • 1 sweet apple
  • 1 banana
  • 2 stalks celery, chopped
  • ½ avocado
  • Juice and flesh of 1 lemon
  • ½ cup BPA-free canned coconut cream
  • 2 scoops collagen powder 
  • Pinch sea salt
  • Water to thin

DIRECTIONS:

Add all ingredients to a high-speed blender. Blend until smooth, then serve.
