🥣 Ingredients Strawberry High Protein Blender Pancake Recipe

Learning how to make a high-protein pancake recipe is easier than it sounds because I make them right in the blender. It only takes a few ingredients to make a healthy breakfast that everyone will enjoy. Check out the directions below.

Cooked Beets - Contain a fair amount of iron and also give extra sweetness to this recipe.
Strawberries - Fresh strawberries are best in this recipe. However, if you want to be cost-effective, try using frozen strawberries instead.
Egg - You need a binder for any pancake recipe, eggs are perfect. However, you can swap it with a flax egg if you want to make vegan pancakes.
Banana - One banana is all you need for that natural sweetness. Tip: Use up your ripe bananas in this recipe.
Chia Seeds - This powerful plant-based seed is high in Omega-3's, plus lots of healthy fats and protein too.
Almond Butter - This ingredient bumps up the healthy fats and protein factor, and gives the flavor a hint of a strawberry cake taste when combined with the strawberries and beets.
Vanilla Protein Powder - Packed full of protein, this ingredient is necessary, as we are omitting traditional flour and swapping in protein powder.
Baking Powder - A pinch is needed to get those extra fluffy pancakes.
Baking Soda - I find using both powder and soda keeps those pancakes fluffy and nice.

Reheat in the toaster or microwave for a few minutes.

🤔 FAQ - Common Questions

These FAQs should help address any common concerns or questions you may have about making these high protein pancakes.

Can I Make These Strawberry Protein Pancakes Ahead Of Time?

Absolutely! These pancakes store beautifully. Simply let them cool completely, then refrigerate in an airtight container for up to 4 days. Reheat in a skillet or toaster for a quick protein-packed breakfast. You can also freeze them for up to 3 months. Simply just layer parchment paper between each pancake.

Do The Pancakes Taste Like Beets?

Not at all! The natural sweetness of strawberries and vanilla protein powder balances the earthy flavor of beets. If you're new to cooking with beets, start with a smaller amount and gradually increase as you get used to the flavor.

Can I Make This Recipe Without A Blender?

Yes! You can whisk together the wet ingredients and mash the beets well before mixing in the dry ingredients. However, blending helps create that smooth, fluffy texture and evenly distributes the beets for gorgeous color.

Is This Recipe Gluten-Free?

Yes, it's naturally gluten-free when made with certified gluten-free oats or oat flour. Always check your labels if you have a gluten sensitivity or celiac disease.

How Can I Make This Recipe Vegan?

Simply swap the eggs for flax eggs (1 tablespoon flaxseed + 3 tablespoons water per egg) and use a plant-based protein powder along with non-dairy yogurt and milk alternatives.

Can I Use Cooked Or Raw Beets?

Cooked beets blend more smoothly and add natural sweetness, so they're preferred. But if you're using a high-speed blender, raw beets can work. Simply just peel and chop them into small pieces first.

What Toppings Go Best With These Strawberry Protein Pancakes?

Try a dollop of Greek or coconut yogurt, fresh strawberries, a drizzle of almond butter, and a sprinkle of hemp seeds for extra gut and hormone-nourishing benefits.

Pro Cooking Tip

When cooking high-protein gluten-free pancakes using protein powder, be sure to cook low and slow. The temperature should never be too high. They take patience. When you see bubbles on the top of the pancake, that is the best time to flip them over.
