30 Minute Creamy Sun-Dried Tomato Chicken (No Heavy Cream)

This sun-dried tomato chicken is delicious even with no heavy cream. My Tuscan chicken recipe, also known as the popular "marry me chicken", is made with flavorful sun-dried tomatoes and coconut milk. Serve with cauliflower rice, and you have a delicious anti-inflammatory dinner recipe idea.

To make this sun-dried tomato chicken recipe, you will simply need to gather a few key ingredients and cook up an easy 30-minute dinner recipe.

1. Chicken Thighs - Sometimes I like to switch things up and use chicken thighs instead of chicken breasts. However, this recipe also works well with chicken breasts.
2. Sun-Dried Tomatoes - Great source of antioxidants, including lycopene, which can help protect the skin from damage that the sun may cause.
3. Coconut Milk - Good source of potassium to help regulate blood pressure. Coconut milk also contains lauric acid, a medium-chain fatty acid shown to have anti-inflammatory effects on the body.
4. Avocado Oil - Research has shown avocado oil has an anti-inflammatory effect, reducing CRP. However, you can also use extra-virgin olive oil, which is also perfect for an anti-inflammatory diet.
5. Bone Broth - Great for gut health and adds tons of deep flavor. Try my homemade bone broth recipe, or you can use your favorite brand of broth.
6. Green Onion - I like to use green onions for the color and milder flavor, but a white onion is perfect too.
7. Parsley- I like fresh parsley for a lot of my chicken recipes. If you don't have fresh, you can add some dried parsley for added flavor. I highly suggest you get used to using fresh herbs because they not only elevate the flavor of your dish but bring additional freshness to the meal.
8. Cauliflower Rice - Cruciferous veggies like cauliflower are great for gut health, but you can swap it out with broccoli rice too. Instead of a low-carb option, serve with cooked chickpea pasta.

👩‍🍳 How to Make Sun-Dried Tomato Chicken Recipe?

Here's how to make this easy, healthy, marry me chicken recipe.

In a medium skillet, heat avocado oil over medium heat. Season chicken thighs with salt, pepper, and garlic powder. Add to skillet.

Cook until well browned on one side, approximately 8 minutes, then flip. Add sun-dried tomatoes, bone broth, and coconut milk to the skillet. Cook an additional 8 to 10 minutes or until chicken is cooked through.

Remove from heat and mix in the fresh parsley and green onions. Allow 3 to 5 minutes to sit for sauce to thicken. Serve over cauliflower rice.

Hint: Serve this over a complex carbohydrate option, like chickpea pasta or brown rice, for a more balanced macro dinner instead of a low carb version.

💙 Substitutions for Marry Me Tuscan Chicken Recipe

Here are a few substitutions if you dislike an ingredient or don't have one on hand.

• Chicken Thighs - Use chicken breasts or bone-in chicken thighs, but the cooking time will increase if you use bone-in chicken.
• Coconut Milk - Swap with plant-based cream or heavy cream or choice.
• Cauliflower Rice - Use brown or wild rice instead. You can also serve the Tuscan chicken over gluten-free pasta. I personally love making gluten-free corn bread and serving that on the side. Perfect to soak up all that delicious sun-dried tomato sauce and chicken.
• Sun Dried Tomatoes - Swap with canned roasted herb tomatoes, tomato puree, or a few roasted red bell peppers.

As always, all my recipes are gluten-free.

🍴 Variations

Here are a few variations for my healthy version of sun-dried tomato chicken.

• Spicy - Add a few red chili pepper flakes while cooking to add in a bit more kick to this dish.
• Bulk Up With More Veggies - Try adding mushrooms for more vitamin D. I love fresh spinach added during the last few minutes of cooking.

You get a full dinner or lunch meal without much prep. I like to pair this sun-dried tomato chicken recipe with cauliflower rice. For leftovers as lunch, I also make a bed of massaged kale and top with this chicken and cauliflower right over the top.

You can also serve this with brown, wild, or white rice. It's also perfect over gluten-free pasta. I have even served this with gluten-free cornbread on the side. Simply delicious.

🍳 Equipment

Nonstick ceramic saute pan or skillets are perfect for those quick 30 minute dinner options.

I personally love the Caraway nonstick saute pan with lid. Not only is it pretty to look at, but it is also a durable non-stick pan that makes cooking easy and clean up fast.

❄️ Storage

Store any leftover marry me chicken recipe in the fridge for 4 to 5 days. I love to meal prep this sun-dried tomato chicken on Sunday evenings. Simply prep the cauliflower rice and chicken separately, and reheat when ready to serve.

Feel free to double the recipe if you have a larger family or want extras.

I haven't frozen this marry me chicken recipe, but this should last 2 to 3 months in the freezer. Be sure to store in a freezer safe container.

😷 Food Safety

Food safety is a serious concern, especially when preparing raw chicken. Here are a few food safety tips to be reminded of.

• Wash hands properly with soap and water for 20 seconds after touching raw chicken.
• Cook chicken to a minimum temperature of 165 °F (74 °C)
• Do not use the same utensils on cooked food that previously touched raw chicken. This is especially true if prepping a raw salad on the side.
• Don't leave food sitting out at room temperature for extended periods.
• Don't wash raw chicken before cooking it. This is not necessary, as any bacteria will be killed after cooking. Washing raw chicken is the fastest way to result in cross-contamination and food-borne illness.
