This was inspired by my other breakfast cookie recipe, which was made with blueberries and zucchini on this site. It pairs well with this oat milk recipe or matcha latte recipe.

🥣 Ingredients Healthy Breakfast Cookies

To make these healthy breakfast cookies, you will simply need to gather a few key ingredients that create the best tasting banana walnut cookie recipe.

1. Bananas - Natural sweetness from the bananas balances the walnuts nicely.
2. Eggs - I typically use a real egg in my cookie recipes. However, if you have an allergy or are vegan, try using a flax egg. If you want to learn how to make a flax egg and other food swaps for food allergies, check out my free Food Swap Guide.
3. Maple Syrup - A tablespoon is all you need, combined with the vanilla extract, to create the perfect amount of sweetness.
4. Vanilla Extract - You need this for the cookie batter to add a delicious vanilla flavor.
5. Vanilla Protein Powder - Packed full of protein, this vegan protein powder is perfect for increasing your protein intake.
6. Almond Flour - Any quality brand of almond flour will work in this healthy breakfast cookie recipe.
7. Coconut Flour - Naturally gluten-free flour, perfect for anyone with celiac disease.
8. Baking Powder - A pinch is needed to get those extra fluffy cookies.
9. Cinnamon - This is the perfect spice to add to bring warmth of flavor to the recipe.
10. Sea Salt - A pinch will help enhance the sweetness of the bananas and maple syrup in these breakfast cookies.
11. Walnuts - You can swap for pecans or another favorite nut of choice. However, I think the walnuts add a deliciousness to the recipe.
12. Medjool Dates - The natural sweetness of dates is a great swap for refined sugar.

🌰 Health Benefits of Walnuts

Great source of omega-3 fatty acids. This super food can help reduce inflammation. Walnuts also contain a fair amount of vitamin E, and vitamin B5 and B6, which are both vitamins that help tighten the pores, improve skin appearance, and plump up the skin.

Walnuts Are Great For Brain Health

These delicious nuts, also known as Juglans regia, are not only delicious, but also boast impressive health benefits, particularly in terms of brain health. Packed with essential nutrients and antioxidants, walnuts have long been recognized as a valuable addition to a balanced diet.

One of the standout features of walnuts is their high omega-3 fatty acid content. These healthy fats are crucial for brain function and have been linked to improvements in memory, cognition, and brain health.

Omega-3 fatty acids are known to support the structure and integrity of brain cell membranes, helping efficiently communicate between neurons and reduce inflammation in the brain.

In addition to omega-3s, walnuts are abundant in antioxidants, including polyphenols and vitamin E. These powerful compounds protect brain cells from oxidative stress caused by free radicals, which can contribute to neurodegenerative conditions like Alzheimer's and Parkinson's diseases.

By reducing oxidative damage, walnuts may help preserve cognitive function and reduce the risk of age-related cognitive decline. Furthermore, walnuts are a good source of vitamins and minerals essential for brain health

🍌 Banana Health Benefits

Bananas are a great fast energy source for athletes, because they are a convenient way to replenish carbohydrate intake while on the go. Bananas are a wonderful source of carbohydrates. In addition, they also help maintain electrolyte balance.

Firstly, the proper balance of electrolytes can help lower blood pressure, which helps reduce the risk of stroke and kidney disease. This is just one striking health and beauty benefit of bananas.

Bananas are not only highly nutritious, but also contain 12% of your potassium requirements for the day. One medium banana contains roughly 425 mg of potassium.

Potassium is an important mineral when it comes to regulating blood pressure. However, those individuals with advanced stage kidney disease should limit or avoid eating bananas.

If your doctor has you following a kidney-friendly diet, you should reduce your potassium, phosphorus, and sodium intakes.
