Here are some tips to getting it fresh. Learning to make healthy eating fun, while creating a balanced plate of food at meal time. This article will show you how to ditch the boring, healthy diet food! I’m going to be taking some traditional “boring healthy eating” meals and turning them into fun little concoctions that taste better than they look! So, let’s look at what’s on my plate.
Healthy eating is more than just following a passing diet, fad or boring food. It’s a lifestyle choice that has advantages for both your health and the environment.
The secret to keeping it interesting is to ensure you have a variety of healthy foods and ingredients on hand, so you can mix and match to create meals that are both delicious and nutritious.
What’s on My Plate of Food for Healthy Nutrition?
How do you plate a healthy, balanced meal?
Building a healthy plate of food is about finding the right balance of macronutrients for your body. As well as adding in lots of colorful antioxidant rich vegetables or fruit.
Here’s a quick reference to creating a healthy, balanced plate of food.
Protein
When I build my healthy meals, I always start with a good source of protein. This is usually a piece of grilled fish or chicken, and sometimes a vegan protein source of air fried tofu seasoned to perfection.
Get creative with your protein choices.
Non-Starchy Veggies
Then on my plate, I layer on my vegetable or fruit as a healthy carbohydrate source for balanced nutrition.
Healthy Fats
Finally, round it out with a good source of healthy fat, like avocado or dressing with heart healthy olive oil. The key is to balance your blood sugar while still enjoying the food you eat.
Let’s look at a few of my favorite meals during the day.
The Traditional Healthy Salad
Take your favorite lettuce. Add some of your favorite veggies, whether it’s bell peppers of any color, cucumbers, etc.
Add some protein, whether it’s grilled chicken or firm tofu. You can even cut up a hard-boiled egg and chop it into your salad.
No boring diet food here.
And the best part is the dressing: mix up some heart healthy olive oil and red wine vinegar with some minced garlic, Dijon mustard, salt, and pepper, and shake it on up.
Dress your salad and toss it around to mix. This easy salad recipe will be your new go-to salad.

Winner Winner Chicken Dinner
Here’s my favorite chicken dinner as of late.
Plus, it’s a simple budget friendly meal too. Take the pollo asada from Trader Joe’s. Super easy to sauté right in a grilling pan on the stove, and add your spices and herbs.
Serve with a side salad OR delicious brown rice seasoned with olive oil, salt, pepper, and garlic & herb seasoning from Costco (or both).
One of the easiest and most delicious dinners I make here at home. I always love to serve grilled chicken with roasted sweet potatoes. I top my sweet potatoes with a healthy fat source, like my tahini dressing.
My Simple Go-To Pasta Recipe
Thankfully for all of us, they sell many varieties of pasta, including red lentil, chickpea, protein-packed, and more. Well, my go-to right now is chickpea or lentil pasta.
I boil the water as usual and cook it on the stove, while sautéing some garlic and olive oil in another pan. Add some parsley, basil, red pepper flakes, salt, pepper, whatever you want in there until the garlic is light brown (or however you like your garlic. I’m a weirdo who loves my garlic just before it’s too late).
When the pasta is done cooking, toss it into the garlic/oil mixture and mix it up. Add some more herbs and spices as you like, top with your favorite cheese, and let sit for about 10 minutes before serving. I love serving this with an easy cucumber salad. I promise you.
You will LOVE the taste. Healthy eating doesn’t get any easier than this.
