Raw Vegan Raspberry Cheesecake: The Ultimate Raspberry Cheesecake Cup Recipe

These no bake raspberry cheesecakes are perfect for any party or gathering, because they look like they took a lot of effort to make, but they are actually quite simple to prepare.

If you are looking for a healthy dessert with all the creaminess of a regular cheesecake, then this raspberry cream cheesecake recipe is for you.

Simple No Bake Raspberry Cream Cheesecake

A typical cheesecake recipe is usually baked and made with cream cheese, refined sugar, and eggs. But my recipe for a raw vegan version of a out of this world tasting cheesecake with raspberries will become your new go to dessert recipe, especially for an Easter Sunday dessert.

I bet you are wondering where exactly is the cream cheese in this raspberry cheesecake recipe. Well, it’s made with raw almonds, coconut milk, maple syrup and some other delicious ingredients.

That’s what is so special about this healthy dessert recipe, because it’s vegan plus made with nutrient-dense ingredients derived from whole foods.

Mini Cup Cheesecake is the Way to Go!

The best thing about these mini portioned cheesecakes is how cute they are, as little cup sized portions.

You can easily store the rest in the freezer for another day. I honestly think you will be surprised at how much flavor is inside these tiny little desserts.

What’s So Special About My Raspberry Topping for Cheesecake?

I have a secret super food ingredient in my yogurt raspberry topping that will surprise you. So, what is the special ingredient?

It’s Goji berries ground up into a powder. Yummy, and brings out that pretty pink color. My Goji berry powder, an adaptogen, is the perfect addition to other recipes. Try adding it to oatmeal or even smoothie recipes.

Raspberry Health Benefits

I have talked about the amazing health benefits of raspberries before. But, it’s worth stating that this tasty little berry packs a huge punch in the nutrition department.

Fiber is one of the huge health benefits. One cup of raspberries has 8 grams of fiber, is low in calories, brimming full of vitamin C, and also anti-inflammatory for the body.

Raw Vegan Raspberry Cheesecake Recipe

Makes 12 mini cheesecake cups.



  • 1 cup dates, pitted
  • One and half tablespoons coconut oil
  • 1 tablespoon flaxseed meal
  • One cup raw almonds
  • zest of one orange (1/2 tablespoon)


  • 2 cups raw almonds
  • 1/3 cup maple syrup
  • 1 cup raspberries
  • 1/4 cup orange juice
  • 1/2 cup coconut milk from a can
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 1 scoop vanilla collagen powder


  • 1 cup unsweetened coconut yogurt
  • 1 to 2 teaspoons Goji Pink Dust (powdered Goji berries) *
  • 1/4 cup raspberries
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract


  1. In a food processor, blend the crust ingredients until well combined. Press the crust into either silicone muffin cups or a lined muffin tin. Place into the freezer to set up while you make the filling for the vegan cheesecakes.
  2. To make this delicious raspberry cheesecake filling, blend the filling ingredients until smooth. Top the crust with the cheesecake filling. Place back into the freezer to set up for at least 4 hours.
  3. To make the super food yogurt topping, combine all the ingredients in a blender and freeze for 1 hour.
  4. To serve, make sure you remove from the freezer about 30 minutes before eating. Top with the delicious raspberry yogurt topping and some fresh raspberries too.


To make the Goji Pink Dust:

Simply grind up dried Goji berries in your food processor or blender until a fine dust is made. This is my secret ingredient that I add to many of my recipes, like oatmeal, smoothies, cookies, etc. 

If you want a deeper vibrant pink color to the yogurt topping, use 2 teaspoons of the Goji berry powder, but if you want a lighter baby pink color, use less. I always start with less and add more until I reach my desired color.

It’s best to thaw the cheesecakes for about thirty minutes to one hour to ensure the texture is firm creamy, instead of a frozen bar texture. This makes it much easier to cut into. 


How long does this raspberry cheesecake last? It’s always best to store these cheesecakes in the freezer for up to two months. Thaw for about 30 minutes to one hour before serving.

I don’t advise storing in the refrigerator, or it will fall apart and melt into a mushy disaster.
