🥣 Flourless Chocolate Cake Ingredients
To make the best tasting chocolate cake recipe, you will simply need to gather a few key ingredients that create an easy flourless chocolate cake recipe.
- Raw Cacao Powder - Great source of antioxidants with a delicious chocolate flavor.
- Chocolate Chips - I love the brand Enjoylife for my mini dairy-free chocolate chips.
- Espresso Powder - This ingredient is important to get that deep rich chocolate flavor. However, it doesn't taste like coffee, but a decadent rich chocolate taste.
- Coconut Sugar - I prefer coconut sugar in this recipe. However, you can also swap it for a tablespoon of maple syrup. See substitution notes.
- Eggs - I typically use real eggs in my cake recipes. However, if you have an allergy or are vegan, try using a flax egg. If you want to learn how to make a flax egg and other food swaps for food allergies, check out my free Food Swap Guide.

🍫 Can A Celiac Person Eat Chocolate?
Celiacs cannot eat gluten. Chocolate typically doesn't contain wheat, so it may not be safe for people with celiac disease. Check the ingredients and choose chocolate that doesn't contain wheat or other gluten-containing grains.
Raw Cacao Health Benefits
Raw cacao is beneficial in so many ways. For instance, not only does it contain phenylethylamine, which helps boost happy hormones, but it's also loaded with magnesium.
A large percentage of the population is deficient in magnesium. However, it's important for healthy digestion and a relaxed nervous system, so add more raw cacao recipes into your diet. If you want to try out my delicious raw cacao healthy milkshake recipe.
❓ Does Chocolate Make You Constipated?
Constipation from chocolate can occur when you are eating foods that contain other ingredients, like milk, sugar, and even butters and oils, which can lead to diarrhea or constipation.
Chocolate does contain caffeine, which is a stimulant, so this can lead to dehydration or digestive distress, like diarrhea or constipation.
However, raw cacao has been used to treat constipation. Raw cacao is high in fiber, thus you will notice more frequent bowel movements, decreasing your bouts of constipation.
So, if you suffer frequent constipation, try adding in a handful of raw cacao nibs to your smoothie bowl or swapping your cocoa powder in baked goods for raw cacao powder.
❓ What is a Flourless Chocolate Cake?
If you have never had the pleasure of eating a flourless chocolate cake, then you are definitely in for a treat. Think of this recipe as a cross between a fudgy brownie, cake, and pudding. Smooth tasting, but with a depth of chocolate flavor.
👩🍳 How To Make A Flourless Chocolate Cake?
🎛️ Preheat oven to 325 degrees. Spray the inside of a 9-inch spring form pan with coconut oil spray. Or if you prefer, line the pan with parchment paper.
🍫 Begin by melting the chocolate with the coconut oil. You can do this in a double boiler on the stovetop or in the microwave. I like to melt the chocolate chips in a small glass bowl in the microwave. Start by melting for 20 seconds. Then stir. Keep doing this until the mixture is completely melted. Set aside to cool for 5 minutes.
🥚 After the chocolate mixture has cooled to room temperature, mix the eggs and the chocolate together. I like to do this in a stand alone mixer. Beat the mixture on medium high until fluffy.
☕️ Next, slowly add in the coconut sugar, while continuing to beat the cake batter mixture. Add in the espresso powder and beat slightly.
🥮 Pour the cake batter into the prepared spring form pan. Bake for 45 minutes.
Allow the cake to cool before removing from the spring form pan.
🍓 Now you can serve it exactly as is or decorate. I like to dust the top with cacao powder or cocoa powder. You can also dust with powdered sugar. Top with berries like strawberries, raspberries, or orange slices.
Pro Cooking Tip
Make sure the melted chocolate mixture has cooled to room temperature before mixing in the eggs, or you will end up with chocolate scrambled eggs.

Pro Nutrition Tip
Incorporate prebiotic-rich ingredients to nourish beneficial gut bacteria. Consider adding a tablespoon of chicory root powder or inulin to the batter. These prebiotics promote a healthy gut microbiome and blend seamlessly into the cake without altering its taste or texture.
Additionally, topping the cake with a dollop of unsweetened Greek yogurt can introduce probiotics, further supporting gut health.

🍴 Flourless Chocolate Cake Variations
Here are a few variations to customize your gluten free flourless chocolate cake recipe.
- Higher Protein - Swap the the raw cacao powder with your favorite chocolate protein powder.
- Toppings - Serve with fresh raspberries or strawberries.
❄️ Storage
Store any leftover chocolate cake in an airtight container in the fridge for 1 week.
You can freeze your chocolate cake for up to 3 months. I suggest removing from the freezer about 5 minutes before eating. This allows the cake to soften and thaw out. This cake is great as a gluten-free dessert recipe for those unexpected guests.
🥘 Meal Prep Tips
- Batch Baking - Prepare multiple cakes at once and freeze them for future enjoyment. Wrap each cooled cake tightly in plastic wrap, then aluminum foil, and store in the freezer for up to three months. Thaw in the refrigerator overnight before serving.
- Pre-Portioning - Slice the cake into individual servings after it has cooled. Wrap each piece in parchment paper and store in an airtight container in the refrigerator or freezer. This allows for easy access to single servings without needing to thaw the entire cake.
- Garnish Preparation - Prepare any desired toppings, such as fresh berries or chopped nuts, in advance. Store them separately in airtight containers. Having these ready makes it simple to add a finishing touch to each slice before serving.
- Serving Suggestions - For a gut-friendly accompaniment, consider serving the cake with a side of fermented berry compote. To make this, lightly ferment mixed berries with a small amount of honey and lemon juice for 24 hours. The natural fermentation process enhances the probiotic content, complementing the cake's rich flavors while supporting digestive health.
By implementing these tips, you can enjoy a decadent flourless chocolate cake that aligns with your gut health goals and simplifies your meal preparation process.
🤔 FAQ - Common Questions About Making A Flourless Chocolate Cake
These FAQs should help address any common concerns or questions you may have about making this flourless chocolate cake recipe.
What exactly is a flourless chocolate cake?
A flourless chocolate cake is a rich, dense dessert made without wheat flour. Its texture is often described as a cross between a fudgy brownie and a chocolate torte, with deep chocolate flavor and a naturally gluten-free profile.
Is this cake gluten-free?
Yes, since this recipe contains no flour, it's naturally gluten-free and suitable for those with gluten sensitivity or celiac disease when all other ingredients (like chocolate) are gluten-safe.
What kind of chocolate should I use?
For best flavor, use high-quality dark chocolate or chocolate chips with at least ~70% cocoa. This balances richness with sweetness and helps create a deep chocolate taste without being overly bitter.
Can I make this cake vegan?
Yes! To make it vegan, swap the eggs for flax eggs or another plant-based binder and use dairy-free chocolate and butter.
How should I store leftovers?
Store any leftover cake in an airtight container in the fridge for up to 1 week. You can also freeze it for up to ~3 months. Simply just thaw before serving.
Is this cake healthy?
While a flourless cake still contains sugar and fats, it can offer some nutrients depending on ingredients (like antioxidants from cocoa and protein from eggs), and it's a flavorful dessert option for special occasions. Enjoy it in moderation as part of a balanced diet.
Can I use alternative sweeteners?
Yes. Alternatives like maple syrup, monk fruit, or stevia can work as substitutes for sugar, though texture and baking time may vary slightly.
What are good toppings or serving ideas?
This cake pairs beautifully with fresh berries, powdered sugar, a dollop of whipped cream, or even a scoop of ice cream; thus enhancing both presentation and flavor.
