9. Onion - I like to use a sweet yellow onion, but a white onion is perfect too. A red onion will change the flavor slightly, but also works.
10. Cilantro - I personally feel the more cilantro the better. However, I understand if you dislike cilantro, simply leave it out of the recipe.
