The prep time on this easy lunch recipe was literally 5 minutes. It only took me 2 minutes to cook. How easy is that?
I used my ginger turmeric bone broth recipe for the base of the soup. However, you can use any store-bought bone broth instead. It's that simple.

🥣 Ingredients Chicken Soup With Zucchini Noodles
To make this simple zucchini noodle chicken soup recipe, you will simply need to gather a few key ingredients to create a fast, easy lunch or dinner today.
- Zucchini - This is a wonderful alternative to pasta. You can create "zoodles", which are spiralized zucchini in place of traditional pasta.
- Mushrooms - Mushrooms contain polyphenols and carotenoids, which can help protect the body against free radical cell damage.
- Spinach - Spinach is rich in iron, folate, and B vitamins.
- Bone Broth - I like to use my own chicken bone broth recipe. The flavor is out of this world delicious.
- Chicken - I like to cube up some chicken breast from a prepared rotisserie chicken that I purchase at my local grocery store. You can also cook up some fresh grilled or roasted chicken breast to use in this recipe. However, I like to keep things fairly simple and use a prepared rotisserie chicken.
- Fresh Garlic - I personally prefer the flavor of fresh garlic, but you can also substitute with dried garlic powder.

🩺 Health Benefits Of Zucchini Chicken Soup
Learn all about the health and beauty benefits of eating this delicious zucchini and chicken soup recipe has for the body.
Zucchini
Did you know that raw zucchini has significant health benefits for your skin? Foods rich in water content are tremendous for the skin, especially if you suffer from dry skin.
In the winter, more people suffer from dry skin, so by adding extra zucchini into your diet in the cooler months, you can moisturize the skin from within to eliminate any dry flaky skin.
Chicken
Chicken is a great source of protein. Discover some of the health benefits that chicken provides for the body.
Health Benefits of Chicken
I like to cut back on red meat whenever I can, and one of the easiest ways to do that is by making recipes with chicken or turkey instead.
Generally, the thighs and legs (dark meat) tend to be more flavorful, but higher in fat. This chicken zucchini noodle recipe is the perfect use of rotisserie chicken breast.
Bone Broth
Bone broth is excellent to help heal intestinal permeability, otherwise known as leaky gut. The collagen helps decrease inflammation, but also nourish the lining of the intestines.
Spinach
I love this anti-aging vegetable because it helps keep your skin soft, hydrated, and gives a radiant, dewy glow to your skin.
Feeling tired? Spinach is a food you should include in your meals. Think of Popeye, he loved his spinach and for good reason.
Mushrooms
Mushrooms are also great for gut health. The polysaccharides in mushrooms such as chitin, hemicellulose, α- and β-glucans, mannans, xylans and galactans are a source of prebiotic fiber (food) for our good gut bacteria (1).
Garlic
Fresh minced garlic is perfect to evenly distribute that delicious garlic flavor. Garlic have long been hailed for their incredible health benefits, particularly when it comes to supporting gut health and balancing hormones.

🍽️ How Do You Serve Chicken & Mushroom Soup?
I served this simply as is. This was so easy to throw together and serve without any real preparation. I added fresh garlic and a bit of lime juice squeezed over top. However, it isn't necessary. It is good, simply as is.
I love to serve these alone for a light lunch idea. You can try this healthy soup recipe with a side salad. I also love to add some slice avocado to get a boost of additional healthy fats into the soup.

🍴 Variations
Here are a few variations for my healthier version of a chicken mushroom soup recipe.
- Spicy - Add a few red chili pepper flakes while cooking to add in a bit more kick to this soup.
- Bulk Up With More Veggies - Try adding in some fresh green beans, broccoli, and even water chestnuts, which work well in this dish too.
❄️ Storage For Zoodle Soup Recipe
Store in an airtight container in the refrigerator for up to 5 days. I like to store my soup recipes in mason jars or meal prep containers for larger batches.
🤔 FAQ - Common Questions
These FAQs should help address any common concerns or questions you may have about making this chicken and mushroom soup recipe.
Can I Use Regular Pasta Instead Of Zucchini Noodles (Zoodles)?
Yes, you can substitute spiralized zucchini with your favorite pasta (whole wheat, gluten-free, or regular). Just keep in mind the carb count will be higher and the "zoodle" texture will be replaced by a more traditional pasta feel. The recipe's low-carb angle will shift accordingly.
Can I Make This Soup Ahead Of Time And Reheat Later?
Absolutely. You can prepare the soup (including the zoodles) ahead, then store it in an airtight container in the fridge for up to 5 days.
When reheating, if you'd rather the zoodles stay firmer, consider adding them just before serving instead of letting them sit in the broth for a long time.
Can I Freeze This Recipe?
While you can freeze it, zucchini noodles tend to become very soft or water-logged when frozen and reheated. If you plan to freeze, consider storing the broth, cooked chicken, mushrooms and spinach separately and spiralizing fresh zucchini at serving time for the best texture.
What If I'm Vegetarian Or Vegan? Can I Adapt This?
Yes. For a vegetarian version, swap the cooked chicken for firm tofu, chickpeas, or another plant-based protein. Use vegetable broth instead of bone broth. For a vegan version, also omit any animal-based broth and ensure all other ingredients are plant-based.
What If I Don't Have A Microwave Or Spiralizer?
No spiralizer? No problem. You can use a knife or julienne peeler to create zucchini "strips." No microwave? Just heat everything on the stovetop over medium heat until warm and the ingredients are cooked through; about 3-5 minutes.
How Can I Make This Zucchini Chicken Soup Spicier Or More Flavorful?
To boost flavor, you can add red chili flakes or a dash of hot sauce for spice. Alternatively, finish the soup with a squeeze of fresh lime or lemon juice for brightness. You could also swap in flavored broth (e.g., garlic herb) to deepen the base flavor.
What Are Good Toppings Or Sides To Serve With This?
This soup is light and nourishing on its own, but you might like to add sliced avocado for healthy fats, or a crisp side salad for extra veggies. You might also sprinkle chopped fresh herbs (like parsley or cilantro) or a few toasted seeds/nuts for crunch.
How Many Servings Does This Zucchini Chicken Soup Make, And What Are The Nutrition Stats?
The recipe yields 1 serving (as written). According to the blog: 265 kcal, 8 g Carbs, 47 g Protein, 5 g Fat. Note: these numbers are estimates and can vary based on exact ingredients used.
Is This Zucchini Chicken Soup Suitable For Meal Prep?
Yes, it's ideal for a quick lunch or dinner that can be made in minutes if you have pre-cooked chicken and ready zoodles. It only takes ~5 minutes prep and ~2 minutes cook time.
Can I Increase The Portion Size For More People?
Yes, simply scale up the ingredients (zucchini, mushrooms, spinach, chicken, broth) proportionally. If you're using a large pot, you may need to increase cooking/heating time slightly, especially if made on the stovetop.
