1. Fennel - Great to help regulate hormone balance, prevent constipation, and keep your heart healthy.
2. Beets - You can use red, golden, or even pink beets, which will work in this recipe. You can even try a mixture of various kinds.
3. Carrots - Carrots balance out the earthiness of the beets by adding a touch of sweetness to this soup.
4. Ginger - I used ground ginger for the convenience factor, but fresh ginger works well too.
5. Tahini - A must have ingredient for this soup. I like Mighty Sesame brand of squeezable tahini. It's also perfect to drizzle as a finisher over the top of the soup.
6. Onion - I like a yellow onion for a bit of milder flavor than a white onion. However, both work equally well to add aromatic flavor.
7. Vegetable Broth - I kept this recipe vegan friendly by using vegetable broth.
